-- Make the spicy paste
Combine @gochugaru{1/2%cup}, @gochujang{2-3%tablespoons}, @soy sauce{1%tablespoon}, @vegetable oil{2%tablespoons}, @ground black pepper{1/2%teaspoon}, @rice syrup{1/3%cup}, @garlic{6%large cloves, minced}, and @ginger{2%teaspoons, minced} in a #bowl{}.
-- Marinate the chicken
Cut @chicken breast{2%pounds} into 1 inch cubes.
Add the chicken to the paste and mix well by hand.
-- Fry the rice cakes (optional)
Heat up a #skillet{} with @vegetable oil{1%tablespoon}.
Add @sliced rice cake{1%cup} and fry them for a few minutes. Turn them over with a spatula once or twice until both sides are crispy and light golden brown.
Set aside.
-- Cook the chicken
Place the marinated chicken into a heavy #cast iron pan{}.
Cover and cook over medium high heat for ~{10%minutes}. Be sure not to burn the chicken.
Uncover, stir and turn over the chicken with a wooden spoon. Add the fried rice cakes to the top of the chicken.
Turn down the heat very low. Cover and let cook another ~{10%minutes}, until the chicken is fully cooked.
-- Add cheese and finish
If you're using cheese, pre-heat the oven broiler.
When the chicken is cooked, put @mozzarella cheese{1%pound, cut into small pieces} over the top.
Slip it into the oven for a few minutes until the cheese is melted and bubbly.
Remove and sprinkle with @green onion{1, chopped}.
Serve hot.
