Put all ingredients in a large #bowl{}: @meat{}, @garlic{}, @shallot{}, @lemon grass{}, @black pepper{}, @soy sauce{}, and @sugar{}.
Mix them well.
Cover, put in fridge for a few hours or overnight. Alternatively, just mix them well, put aside, ready to grill.
Grill the meat.
